The Cafe Myth

Brought to you by the team from Chelan's famous Local Myth Pizza, The Cafe Myth was inspired by our passion for pizza and the desire celebrate "there's more than one way to bake a pie!" Veering from Local Myth Pizza's delicious "West Coast Artisan" style pizza, The Cafe Myth celebrates the "Neapolitan Style" pizza. Originating in Naples, Italy, these pies are made by hand kneaded dough from imported Italian "Tipo 00" flour and fermented for several days. "Tipo 00" flour refers to the fineness of the milling, giving this flour an extremely fine texture that produces a very soft, flavorful thin crust. The pies are "hand formed" and topped with a fresh "san marzano" tomato sauce and simple toppings to create a delicate balance of flavors that pair particularly well with wine or craft beer & cider. Each pie is individually baked in our 850 degree stone oven for about 90 seconds to produce a light "char" on the "cornicione" or raised rim around the pizza. Fans of Local Myth Pizza will be sure to notice the "essence of the Myth" as we've infused similar flavor profiles to our sauces and salad dressings made in house that so many people love.
